There is a great variety of tsukemono (literally ‘pickled things’) in Japan, and they feature in so many meals it would be hard to imagine Japanese cooking without them.
In this workshop, you will learn some of the different ways of pickling seasonal vegetables, and how to use typical Japanese seasoning ingredients (all provided) under the guidance of seasoned pickler Aki Henderson.
You will learn to make
• Turnip Amazu
• Daikon in beer
• Mini tomatoes in garlic soy
• Celery in soy sauce
• Courgette quick pickles
Aki grew up in the northern Tohoku region, where several varieties of pickle are always on the table. With long, cold winters, the region is famous for its pickling techniques – a great way to enjoy the bounty of the harvest throughout the year – and relatives and neighbours will often share their home-pickled dishes.
Please bring an apron and/or wear appropriate clothes: you may get messy!
At the end of the workshop, there will be a tasting session and you will be able to take home the pickles you have made.

Aki Henderson established miki meshi (Japanese caterers in London) with two friends in 2013, first hosting occasional pop-up nights at various locations in New Cross and Brockley, and now delivering weekly bento boxes to customers across South East London, as well as catering for private parties and events (including Niwaki’s opening and first birthday parties). Aki set up miki meshi to bring home-cooked vegetarian and vegan Japanese food, that is unfussy and wholesome, of the kind that she grew up eating at home and at family gatherings.
